Ingredients

60g Cauliflower, raw

20g Eggs, chicken, whole, raw

20g Tesco Grated Mozzarella

40g KetoCal 4:1 Powder - Unflavoured (available on prescription)

38ml Tesco Italian Chopped Tomatoes

21g Oil, olive

20g Cheese, Parmesan, fresh

30ml Mayonnaise Hellmanns Full Fat

31g Oil, olive

                         

Method

Grate the raw cauliflower, place in a bowl and microwave for 2 minutes on high, allow to cool slightly then place in a clean tea towel and ring out all the excess moisture.

Mix the egg, cauliflower, and KetoCal together, place onto a lined baking tray and form a 6/7 inch circle, bake in a 170C oven for 10 minutes until golden and set.

Mix the chopped tomatoes with 21g of olive oil and season with salt and pepper then spread over the pizza base.

Mix the mayonnaise, parmesan cheese and oil together in a small bowl, place teaspoons of the mixture over the tomato sauce.

Bake in a 170C oven for 10/15 minutes until the cheese mixture is melted and golden.

Can be batch cooked and frozen for 3 months.
